Its nice to know an easy weight loss recipe for tight schedules. All you need is to know how to buy healthy foods and spruce them up a bit. My favorite recipe is this one. Try it. Its easy to fix and a real winner with all ages!
You will need only 3 ingredients and it's a snap to fix in a pinch. You will need flour tortillas, cold pressed olive oil, and some grated mixed cheese. You can use any type of cheese you like, as long as it's low fat but use smaller amounts of cheese if you're trying to lose weight!
Just don't use a ton of cheese on the quesadilla's and you'll be fine. The trick is to get enough, but not too much!
Cheese Quesadillas (for 2)
You will need: FOUR 8" flour tortillas, grated low-fat cheese, cold pressed olive oil.
Heat around 3 or 4 T. Olive Oil in a skillet over Medium Low heat.
Fry one flour tortilla over medium low heat in olive oil until golden brown on one side, then set it aside on a paper towel to drain.
Fry the other tortilla and add grated cheese on top.
Then cover the cheese with the first tortilla that’s already fried. (browned side up) I fry until golden brown, turning one time to make sure the cheese is good and melted and the outside is good and browned.
Drain on a paper towel.
I serve these Quesadillas with a hearty, healthy salad. What a simple, easy, healthy, weight loss recipe! For added health benefits in your quesadilla, you can add thinly sliced onions, bell peppers, hot peppers, or tomato slices.

Another healthy and easy weight loss recipe using tortilla shells is this one. There are a few other ingredients you'll need for it, but it's no harder or time consuming than fixing taco's!
Chicken Quesadilla Surprise (for 2)
You will need:
1 boneless chicken breast,
Two 8” tortillas, grated cheese,
Lettuce, tomato, onion, peppers
Lite sour cream,
Taco sauce or any sauce of your choice.
Before cooking the chicken, shred some cheese and lettuce and dice the tomato, just as you would for taco's. Set aside.
In a medium hot skillet, fry ONE boneless chicken breast in olive oil until brown on both sides and cooked thoroughly. (This takes about 10 minutes per side)
At the last minute, add a bit of Baja Chipolte Marinade, made by Lawry’s. (You can use any flavor marinade you like or none at all~)
Set this aside until cool. Clean the skillet.
Over medium heat, fry only one side of a flour tortilla in Olive Oil. (I fry two of them only, as there are two of us.)
Set these aside and drain.
Then cut or shred the chicken breast into bite size pieces or thin strips.
Lay each tortilla, cooked side down. (Mentally divide the tortilla into thirds, with a middle and two sides.) Score down the tortilla with a knife where the sections would divide. (Two score lines make 3 sections.) Don't cut down too far though and break the tortilla. Just lightly score it so you can fold it later.
On a large plate and divide the chicken between the two tortillas. Place the shredded chicken down the middle of each tortilla.
Add a light layer of leftover grated cheese, add a heavy layer of shredded lettuce and diced tomato over the chicken.
Top all of this with a small amount of light sour cream and drizzle a bit of taco sauce on the top.
GENTLY fold in each side of the tortilla over the top of the chicken and toppings. Secure with a toothpick and that’s it.
