Sweet Potatoes are My Favorite Comfort Food!

I don't know what to say except that I've always loved sweet potatoes. They are so yummy! When I was little, my mom always served them with butter and salt and pepper. Now I love them anyway you want to serve them, but I love them with butter and some cinnamon sugar especially.

My mom always told me when I was a little girl, that she used to walk to school and that her mom (my grandma) always sent her a (raw) sweet potato with her. She would place the sweet potato on the buck stove they had in the school room and when it was time for lunch, her sweet potato was ready to eat. She ate it plain of course and of course she walked through mounds of snow to get to school and all that too! I guess it made a lasting impression on me.

Thank you for all the great information you have on this site. I have really learned a lot about my health and deeply appreciate all your efforts Carolyn. You are very special, just like sweet potatoes!

PS I was at the doctor's a few days ago and one of the ladies was talking about sweet potatoes while I was waiting. I certainly had my ears perked. She said that when she fixed candied yams, that she boiled her sweet potatoes to get them almost done. The skin peels off easily and then you can cut them up and throw them in the oven. I had never heard of boiling sweet potatoes before so it really pays to listen! And what a great idea!

That is so cool! I love sweet potatoes too! (always have!) I had never heard of boiling them before either. When I make my sweet potato casserole, I take the skin off while they're still raw, then slice them up into 1" round sections. Layer them in a casserole dish like you would scalloped potatoes. Then melt a stick of butter, set aside, and add one cup of standard sugar and one teaspoon of vanilla. Stir the sugar and butter mix together and pour over the potatoes. (It will be very thick but will liquify when it gets in the oven. Cover and bake at 350 degrees for one hour.

I've got the recipe somewhere on this site. I'll look for it and post it. Thanks for the compliments Susan. I do work very hard!
