Fiber Food - Try Prunes Again!

Prunes are a great tasting, constipation reducing fiber food! They are packed with nutrients and are wonderful when you add them to your dishes!

You can serve them raw or cooked. When you cook them with other foods, they make a natural glaze on the foods they're cooked with. They are also delicious to eat alone.

I know, I know.... Laugh all you want. Ha Ha Ha! Prunes have gotten a really bad rap though! They really aren't just for grandma anymore! They may be just what the doctor ordered!

Prunes - A High Fiber Food that Relieves Constipation!

We've all heard about eating prunes or drinking prune juice. When you eat prunes regularly, you will go more regularly.....
(Makes sense doesn't it?)

Prunes are high in fiber and are a great fiber food. They really taste like natures candy! (Move over raisins!)

Prunes are also high in Vitamin C so not only do they taste good but they're really good for you too!

We love sweet potato casserole for our Thanksgiving dinner so I decided last year to add prunes to it. (So it wasn't the same old, same old.....) Change it up a bit, so to speak.

Cooked prunes rock! They're sweet, juicy, and make a nice glaze when you combine them with other foods. The casserole was really, really, good. Everyone enjoyed it, even the ones who said they don't normally like prunes! The prunes actually added a nice touch! However, I had made such a large casserole that we had a bunch of leftovers to take home.

My son and I ended up eating leftover sweet potato casserole for the remainder of the week and by the end of the next week, my constipation problems had disappeared. The high amount of fiber contained in the dish was enough to keep anyone's bowels moving along.

You can stuff prunes into roasts and create beautiful glazes with them. I also had a recipe that called for prunes added to an Idaho potato casserole. I found it on the early show earlier on CBS last year. (I think it was Bobby Flay's recipe!) I tried it and liked it very much. I lost his recipe but if you want my Sweet Potato recipe, here it is!

Sweet Potato Casserole

  • 5-6 medium - large sized sweet potatoes
  • 1 stick butter (Lite butter of course!)
  • 1 C. granulated sugar
  • 1 tsp. vanilla extract
  • *other ingredients

Heat oven to 350 degrees. Remove the skin of the sweet potatoes while they're raw. Do not precook them. Slice width-wise into 1/4 inch to 1/2 inch thick round sections. Layer in an ungreased casserole dish. (Just as you would do scalloped potatoes.) Melt butter slowly on low heat, as not to brown. (Or you can melt it in the microwave of course.) Take off heat. Add sugar and vanilla. Pour mixture on top of the layered sweet potatoes. You don't have to smash it down or anything. It will all melt and liquify once you place it in the oven. Cover and let bake in a 350 degree oven for approximately 45-60 minutes, or until bubbling and sweet potatoes are thoroughly cooked. Allow to sit for 10 minutes. Serve immediately or set aside and thoroughly heat again later.

    *Other Ingredients to add:

Add 1/2 C of: chopped walnuts, prunes, apricots, or raisins. Its a wonderful way to get more fiber food without sacrificing taste!

Add some prunes to your dishes today! You will get the constipation relief you need and feel much less 'stuffy'! Here's a great recipe for steamed prunes!

Steamed Prunes without Pits (fast method)

Take a handful or however many prunes you want to fix out and set them in a small pot. Add water to around the half way mark and simmer for at least 1/2 hour. Take off the heat and allow to stand. If you want some zing in your prunes, add a touch of lemon or orange juice to them. Once they have cooled, they are ready to serve.

Steamed Prunes with Pits (slow method)

  • Wash one-third or one-half a pound of prunes with pits, rubbing them between the hands, rinse in cold water and drain; then cover with cold water and let stand several hours or over night.
  • Set to cook in the water in which they were standing, adding more if needed.
  • Let simmer until they are tender and the water is reduced.
  • Just before removing from the fire add from one-fourth to one-half a cup of sugar and let simmer six or eight minutes (Sugar can be omitted as prunes are already naturally sweet and delicious!)
  • The juice from half a lemon, a little candied orange or lemon rind, or a tablespoon or two of sherry, may be added occasionally, to give variety to the flavor.
  • The blanched pits from the stones also give a pleasing flavor.

Raisins, plums, peaches, and pears are other fiber foods that works similarly to prunes! Any fibrous food that causes more water to be produced in the intestines is good for constipation!

Besides prune juice, plum juice is a newer product you can try or cold apple juice is a viable alternative and gives many people relief.

If you're like most Americans, you're eating only about half the amount of fiber you should. Studies show that the average person eats between 12 and 14 grams of fiber a day. The FDA recommends an intake of 11.5 grams of fiber per 1,000 calories, or 25 grams per day for a 2,500-calorie diet. While that may sound like a lot, most people can meet this daily requirement by eating several small servings of whole grains, fruits, vegetables, and dried beans a day.

Check labels on the foods you eat too. Foods with 5 or more grams of fiber per serving can be labeled 'high fiber' while foods with 2.5 to 4.9 grams of fiber per serving can be labeled, 'A good source of fiber', according to the FDA's food labeling law.

    Why Consume High Fiber Food?

  • Aids in weight loss because foods high in fiber are more filling and satisfy hunger longer; also, fiber contains no calories.
  • May help reduce the risk of certain cancers, including stomach and colon cancer.
  • Reduces digestive problems, including constipation, hemorrhoids, and diverticulitis.
  • Lowers cholesterol levels and reduces the risk of heart disease and stroke.
  • Balances blood sugar levels and reduces the risk of diabetes.

Eating fiber food or foods that naturally have high fiber doesn’t have to be boring. Try various ways to incorporate more prunes or other constipation relieving fruits into your diet. Your pocketbook will save money and you will get relief from your constipation!
