Prunes - A Great Tasting Fiber Food


 

Prunes are a great tasting, constipation reducing fiber food! They are packed with nutrients and are wonderful when you add them to your dishes! You can serve them raw or cooked. When you cook them with other foods, they make a natural glaze on the foods they're cooked with. They are also delicious to eat alone.



I know, I know.... Laugh all you want. Ha Ha Ha! Prunes have gotten a really bad rap though! They really aren't just for grandma anymore! They may be just what the doctor ordered!

We've all heard about eating prunes or drinking prune juice. When you eat prunes regularly, you will go more regularly.....
(Makes sense doesn't it?)

Prunes are high in fiber and are a great fiber food. They really taste like natures candy! (Move over raisins!)

Prunes are also high in Vitamin C so not only do they taste good but they're really good for you too!

We love sweet potato casserole for our Thanksgiving dinner so I decided last year to add prunes to it. (So it wasn't the same old, same old.....) Change it up a bit, so to speak.

Cooked prunes rock! They're sweet, juicy, and make a nice glaze when you combine them with other foods. The casserole was really, really, good. Everyone enjoyed it, even the ones who said they don't normally like prunes! The prunes actually added a nice touch! However, I had made such a large casserole that we had a bunch of leftovers to take home.

My son and I ended up eating leftover sweet potato casserole for the remainder of the week and by the end of the next week, my constipation problems had disappeared. The high amount of fiber contained in the dish was enough to keep anyone's bowels moving along.

I have also seen a recipe that called for prunes added to an Idaho potato casserole dish on the early show earlier this year. (I think it was Bobby Flay's dish!) I tried it and liked it very much. I lost his recipe but if you want my Sweet Potato recipe, here it is!

Sweet Potato Casserole



  • 5-6 medium - large sized sweet potatoes
  • 1 stick butter (Lite butter of course!)
  • 1 C. granulated sugar
  • 1 tsp. vanilla extract
  • *other ingredients

    Heat oven to 350 degrees. Remove the skin of the sweet potatoes while they're raw. Do not precook them. Slice width-wise into 1/4 inch to 1/2 inch thick round sections. Layer in an ungreased casserole dish. (Just as you would do scalloped potatoes.) Melt butter slowly on low heat, as not to brown. (Or you can melt it in the microwave of course.) Take off heat. Add sugar and vanilla. Pour mixture on top of the layered sweet potatoes. You don't have to smush it down or anything. It will all melt and liquify once you place it in the oven. Cover and let bake in a 350 degree oven for approximately 45-60 minutes, or until bubbling and sweet potatoes are thoroughly cooked. Allow to sit for 10 minutes. Serve immediately or set aside and thoroughly heat again later.

    *Other Ingredients to Add:
    Add 1/2 C of: chopped walnuts, prunes, apricots, or raisins. Its a wonderful way to get more fiber food without sacrificing taste!

    Add some prunes to your dishes today! You will get the constipation relief you need and feel much less 'stuffy'!

    Raisins, plums, peaches, and pears are other fruits that works similarly to prunes! Any fibrous food that causes more water to be produced in the intestines is good for constipation!

    Besides prune juice, apple juice is a viable alternative and gives many people relief.

    Eating fiber food or foods that are have high fiber doesn’t have to be boring. Try various ways to incorporate more prunes or other constipation relieving fruits into your diet. Your pocketbook will save money and you will get relief from your constipation!
