Chicken Artichoke Bake

  • 5 to 6 Chicken Strips

  • 1 jar of marinated artichokes
  • 1 small onion
  • 1 jar marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup brown rice
  • paprika
  • and pepper to taste

    In a pan on medium heat, cook the chicken, onions and artichokes (along with marinade sauce). Heavily coat with paprika and pepper and cook until chicken is done and onions are soft. Mix with marinara sauce in a separate pan and cover with cheese. Cook in oven at 350 degrees for 10 minutes or until cheese is melted.

    Serve over brown rice.

    Serves about 4.
